Rogan Josh
Here’s a simple recipe to make Rogan Josh at home:
For the Rogan Josh:
• 600g lamb (cut into pieces)
• 3 tablespoons vegetable oil
• 2 large onions (finely sliced)
• 5-6 garlic cloves (minced)
• 10 inch ginger (grated)
• 1 Rogan Josh spice sachet
• 50g tomato puree
• 150g yoghurt
• 3 chicken stock cubes
• Salt (to taste)
• Fresh coriander (for garnish)
Instructions:
1. Brown the Meat:
• In a large pot, heat the oil over medium heat.
• Add the sliced onions and cook until they turn golden brown.
• Stir in the minced garlic and grated ginger, cooking for an additional minute.
2. Add Spices:
• Lower the heat and add the Rogan Josh spice sachet. Stir well to combine, ensuring the spices don’t burn.
3. Cook the Meat:
• Dissolve the chicken stock in 300ml of water and add to the pan.
• Increase the heat to medium-high and add the pieces of lamb or goat meat.
• Add 150ml of water to the lamb. Stir well.
4. Simmer:
• Cover the pot and let it cook for about 1-1.5 hours.
• Lower the heat to medium-low and stir in the yoghurt, mixing well 5 minutes before serving.
5. Final Cooking:
• Adjust the cooking time based on the tenderness of the meat.
6. Serve:
• Garnish with fresh coriander. Serve hot with rice or naan bread.

Cooking Advice:
• Once you have added the meat and turned down the heat to simmer for at least 1 hour, make sure you stir occasionally to prevent sticking.
• The longer you let the meat simmer on a low heat, the more tender and flavoursome it becomes.
• This meal packs a flavour punch, so feel free to add extra yoghurt or heavy cream to soften the flavour before serving.
